What are you cooking for dinner tonight? My mother-in-law makes the absolute best spaghetti bake. It is so easy to make and I wanted to share the recipe with you. Make spaghetti however you like. Cook the ground beef/turkey and mix with the spaghetti sauce. Then blend it all together. Then take a large baking dish and put a layer of spaghetti, a layer of mozzarella cheese, another layer of spaghetti and top with a layer of mozzarella cheese. She also puts black olives on the top of the dish as well. Then just bake until the cheese has melted. It is one of my husband’s favorite dishes!

| Day 6 of No Dining Out September Posted: 06 Sep 2010 05:00 AM PDT Can you go an entire month without going out to eat? What about a week or a day? Can you cut your dining bill by 20%, 50% , 75% or more? That is what I challenge you to do! At the end of the 30 days, I will choose one winner who will get $50 to spend at a restaurant(s) of their choice! The rules: 1. You must challenge yourself. Try to spend less than you spend now. If you don’t go out to eat at all, challenge yourself to try new meals this month. As long as you are challenging yourself when it comes to your family’s eating habits, you can participate! My progress: We are at Children’s with my oldest. We got here at 5 pm (no dinner) and when I sent hubby back to the house to get some stuff, I had him pick up a to go order from the Waffle House. At least I don’t have to worry about her and being hungry though. ;) How are you doing?

| My oldest is in Children’s Hospital Posted: 06 Sep 2010 01:13 AM PDT My oldest child is currently in Children’s Hospital in Birmingham, AL. She has Appendicitis that ruptured 10 days ago and has caused a large abscess in her abdomen. They are draining the abscess in a few hours and she will likely be in the hospital for 5 days on a series of antibiotics. I was flabbergasted by the diagnosis. When you her “appendicitis”, you think crippling, awful, gut-wrenching pain. She had some lower abdomen pain, but we figured it was a UTI because she complained it hurt when she went to the potty. After 5 days of antibiotics and no improvement, we decided to come to Children’s. When they told us that she had appendicitis and it ruptured 10 days ago, we were floored. The staff at the hospital is incredibly nice and understanding and she has gotten a lot of ‘free’ stuff. She got Disney stickers (asked for Tonka stickers for her brother), a coloring book with crayons and the ‘prettiest’ orange stuffed rat you have ever seen. Please keep her in your thoughts and prayers throughout today and over the next week. I will keep you updated on what is going on.
